Pie crust: 300 ml flour (wheat or wheat/rye mix) 3 ml salt 100 g butter 30-40 ml cold water In food processor, pulse flour and salt, add butter and run until well processed. Add cold water and process until it just takes together into a ball, don't over process it. Thumb out into a big pie dish, freeze for 15 minutes and then pre-bake at 200 C until its set and starts colouring. Quiche filling: Stuff (like 150g smoked ham + one diced onion, or fried mushroooms and a pre-cooked sliced sweet potato, or etc) 300 ml milk 3 eggs salt & pepper & other spices 150 g grated cheese Do the filling stuff (this step might also include spices, like if you fry mushrooms). Whisk egg and milk and salt and pepper together. Put filling and cheese in the pie crust and fill with egg milk. Bake at 175 C for about 40 minutes, until a knife inserted comes out clean. Let sit for a few minutes, then enjoy
