750 g cranberries 750 ml bubblies zest and juice of 2 oranges 1 kg jam sugar (or plain sugar + pectin) 150g chopped dried cranberries 100g finely diced fresh ginger 100 ml cranberry simple syrup or conc cranberry saft Pulse cranberries in food processor until corsely chopped. Dump in pot with orange, ginger, dried cranberries and some of the bubblies and cranberry syrup Boil until cranberries are soft etc. Add sugar and rest of bubbles, boil just until dissolved and proper jam. Jar.
